Whisky is a potent spirit that strengthens bonds between people, families, and generations.

Whisky has been a family tradition for several generations. For the past 500 years, whisky has been at the centre of our family's love and laughter, life and death, tears and triumphs.

Our forefathers used the same ingredients, practised the same ancient craft, and experienced the same level of pleasure that we do today. And, in the future, whisky will reach far into the future, connecting generations.

Our surname, McIntosh, or Mhic a Tòisich in Scottish Gaelic actually means 'Son of the Chief'. This battle honour was bestowed upon our family 900 years ago in recognition of our unwavering loyalty to the Chiefs of Alba (Kings of Scotland).

We are deeply committed to loyalty, the intergenerational meaning of our name, and the transmission of whisky passion from generation to generation.

Spirited Lot Distillers started in 2016 as a wild idea between brothers Jon-Paul (JP) and Chris Willigenburg. It had been a lifelong dream of theirs to collaborate on a project that captured their passion for tastes and flavours, and distilling provided the ideal new adventure. Sisters Sarah and Kate Barton joined the boys on their wild ride along the way. The concept quickly gained traction, and on Christmas Eve of 2018, a 200L copper still named Doris (after the brothers' late grandmother) arrived in our Seaford warehouse.

We are proud to have already received silver and bronze medals for our gins, and we hope to win gold next year. We don't cut corners in our production; we are hands-on with every aspect of it and are constantly tasting our spirit from Doris to ensure the quality of our final products. Everything is currently done by hand, from peeling the citrous to putting the cork in the bottle and delivering to stores. While we strive to adhere to the fundamentals of traditional gin production as much as possible, we are also not afraid to take risks and experiment with new flavours.

Spirited Lot Distillers is committed to using environmentally friendly production methods. Our structure is supported by a large solar grid, which powers our still, and our waste organics are picked up on a regular basis by local farmers and gardeners. We also make mixer syrups (Peninsula BLVD.) and tonic syrups (Tonic X Distillers) from leftover fruit and botanical material from the production of our spirits, so even the most inexperienced home mixologist can whip up a tasty cocktail.

Hart's Farm, located on Tucks Road in Shoreham, is 10 acres in size with Manton's Creek running through it. Our farm began as a dairy; the old corrugated iron milking shed still stands, though it has been renovated and expanded. When we bought the property in 1997, there were beef cattle happily grazing on the lush pastures. We eventually switched to olive farming. We planted 800 baby olive trees in 2000, with the help of friends and family, of the varieties Frantoio, Leccino, and Pendolino, which we thought would do well on the Peninsula. Over time, 500 more trees were planted. These Tuscan varieties produce excellent high polyphenol extra virgin olive oils that have won numerous awards.

In 2010, we began our cider journey by planting an apple and pear orchard. In 2014, we produced our first batch of cider. In 2016, we planted a few hundred more heritage apple cider trees.

The traditional English and French apple varieties used to make Hart's Farm apple cider have won numerous awards. Our ciders are naturally fermented and bottle-conditioned in a range of styles.

To reduce the risks for our local customers, we have now implemented a "click and collect" arrangement, which allows you to buy through our Online Shop and collect at Farm Gate to avoid shipping costs.

Bass and Flinders Distillery was founded in 2009 on the Mornington Peninsula with the goal of producing high-quality, artisanal gins, brandies, and liqueurs that truly reflect our home and heritage.

Our inspiration came from a love of classic French brandies, and we are proud to be the Mornington Peninsula's first distillery. Using many of the same traditional production techniques, we set out to create a premium aged spirit, Ochre brandy, that demonstrates just how good Australian brandy can be. Our location in the wine-growing region of the Mornington Peninsula provided the ideal setting for us to pursue our dream.

We take our cues from our coastal home, where the sea meets the wine-growing hinterland, and handcraft our grape-based eau de vie spirit right here at the distillery, using traditional Charente region of France methods. Victorian wine is double distilled in small batches using a gas-fired alembic pot still, a method designed to highlight the grapes' flavour and viscosity. This is our definition of quality.

We are Victoria's first rum distillery. We are on a mission to show you what rum can be with our Australian-crafted distinctive and delicious rums. We believe that rum has been widely misunderstood for far too long, and we want to show you how diverse, unique, and exciting rum can be.

A 20-year career as a marine engineer at sea was coming to an end. I started a ridiculous rumour about establishing a rum distillery. The idea grew, and before I knew it, I was on a plane to North America, the Caribbean, and Europe to conduct extensive research on craft distilling (it was a long trip!). When I returned home, having been bitten by the craft spirits bug, I was inspired by the distillers' incredible passion for their product and the craft.

That's all there is to it. Who would have guessed that a casual remark would come true? What began as a ridiculous rumour has evolved into JimmyRum, a passion project to distil premium craft Australian rum. Come along for the ride!

While our primary goal is to create incredible rums that warm the soul, we'd love to educate as many of you as possible about the beauty and uniqueness of rum styles from around the world. We plan to make a variety of rums, including dark, light, spiced, agricole, and cachaça.

Helping The Mornington Peninsula.

Mornington is where we live. It's a Mornington Peninsula bayside town. The best location. Locals refer to it as 'the Ninch,' as in Pe-nin-sula... There's always something going on, something to see, and a new coffee shop to try.

We were at a loss for what to do one weekend. That's pretty much how The Ninch came to be. A Mornington Peninsula local's guide. Sorry, city dwellers, the locals truly know the best places to visit, the off-the-beaten-path destinations, and the places where you want to spend your time.

For many years, we have had a personal interest in the Ninch. We adore the Peninsula and the people who call it home. We decided to do something to help this place and its people thrive, grow, and gain attention. There isn't much more you could want from a place when deciding where to live; it's pretty amazing.

Nonetheless, despite all that is going well, there is a persistent undercurrent of poverty, disadvantage, and depression. Something that makes our hearts break. If The Ninch could do anything, we'd like it to have a positive impact on the people in our community. They're all of them. Why couldn't the Mornington Peninsula be a place where everyone has enough food to eat, a place to relax, and enough money to visit that lovely winery?

The Freedman Brothers, the premier Australian horse racing family, commissioned our co-founder Andrew Purchase to construct the racetrack on the property in the early 2000s. This is where the history of St Andrews Beach Brewery begins.

Andrew and Michael Freedman considered the property's 2015 availability to be a once-in-a-lifetime chance. With the necessary infrastructure in place and a unique narrative, Andrew, Michael, and their passionate team of co-owners set about converting the former stables into a truly distinctive brewery.

The 92-acre "Markdel" property is where the St. Andrews Beach Brewery is situated. In the middle of the 2000s, the property had its own grass racetrack and could house up to 80 thoroughbred horses. Over 100 group one winners were housed in the stables, including Makybe Diva, Mummify, and Alinghi, multiple Melbourne Cup, Caulfield Cup, Cox Plate, and Golden Slipper winners.

Our brewery was founded on the belief that producing the best beer on the Mornington Peninsula was a worthy goal. Every drop of beer is brewed and packaged on-site in our state-of-the-art brewhouse and canning line, using only the best hops, malt, and local artesian water. The next time you visit the stables, you will be able to see our beautiful Italian brewhouse and passionate team of brewers. This is as fresh as it gets.
